There are thousands of chili recipes from around the world using a vast variety of ingredients and suited towards any taste.  For those with simpler tastes, try my original recipe, made easy in your favorite slow-cooker or crockpot.  True Texas-style chili has no beans added, but experimentation is the key to finding the perfect recipe for YOUR family - have fun!

    Simple Texas-Style Chili

    Ingredients:

    1 lb lean ground meat
1 15 oz can tomato sauce
    2 tbsp chili powder
    1 tbsp tobasco
    1 pinch salt

    Method:

    1.  Saute ground meat on stove top or using an electric skillet.
    2.  After meat has cooked for 5 minutes, sprinkle 1 tablespoon of chili powder on top and continue cooking.
    3.  Add tomato sauce, remaining chili powder, tobasco and salt to slow-cooker or crockpot, and heat on high while meat is sauteing.
    4.  Stir in cooked ground meat, reducing heat to low.  Allow to simmer for 1 hour and taste.  Add more tobasco, salt and chili flavoring as necessary.
    5.  Allow to slow cook for 8-10 hours.

    Serves 4.

    Variation:

~Try substituting tomato paste, stewed tomatoes or tomato puree instead of tomato sauce.
~For true Southwestern flavor, try adding chopped tomatoes, onions and jalapenos, or a pre-mixed pico de gallo.

    Tips:

~If you do not have a slow-cooker or crock pot available, cook in a ceramic or glass baking dish in the oven at 375 for about 2 hours, stirring frequently.
~To cook on your stove top, use a deep pot and cook on medium high for about 4 hours, stirring frequently.
